Scientists are only now beginning to understand that it is outside influences filtering through the cellular membrane that control the expression of most genes and, in turn, affects the chemical coating (methylation) of the DNA double helix, which is exquisitely sensitive to the environment, particularly during the early stages of life. In our cover story this month (May 2009), WDDTY Deputy Editor Joanna Evans has uncovered a wealth of evidence showing that environmental exposure to pollutants&amp;mdash;pesticides, plastics, even tobacco smoke&amp;mdash;may be responsible for widespread obesity. The most extraordinary revelation is that the damage mostly occurs through prenatal exposure.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;This is especially worrying as many &amp;lsquo;epigenetic&amp;rsquo; changes persist through many generations. In times of famine, for example, populations exposed to famine prenatally have lower birth weights and higher-than-normal rates of degenerative diseases such as diabetes, coronary heart disease and cancer. Yet, even when they received adequate nutrition, those whose mothers had been starved produced smaller-than-normal children and grandchildren.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;The environmental conditions affected at least two generations down the line (Paediatr Perinat Epidemiol, 1992; 6: 240&amp;ndash;5 3).&amp;nbsp; This suggests that those who are overweight due to chemical overload as babies will produce several generations of fat offspring.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;The only note of optimism is the evidence that a good environment can also correct illness.&lt;br /&gt;A mouse study by La r ry Feig and his colleagues at Tufts University looked at whether or not a stimulating environment could override knocked-out genes (Ras-GRF), without which the animals can neither learn nor remember. Put these mice in an unpleasant situation they&amp;rsquo;ve already experienced, provide the stimulus that should trigger the unhappy memory&amp;mdash; and they won&amp;rsquo;t have the foggiest recollection of it.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;But, when the researchers exposed such 15-day-old mice to the equivalent of a indoor theme park&amp;mdash;a large cage with play tubes, cardboard boxes, a running wheel, and toys and nesting material&amp;mdash;that was changed or rearranged every other day. After two weeks, the mice developed a compensatory new protein pathway that helped their long-term memory and learning. Even though they were still missing the gene, a stimulating environment, in effect, turned it back on. The mice showed normal memory and fear conditioning.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Feig then took this one stage further and examined what happened to their offspring, which were given the usual environment rather than the theme park. It&amp;rsquo;s either the look, or the health, or the concern about what other people may say about them, or the bullies in school &amp;ndash; all the messages from society are that being chubby, overweight, zaftig, or plump is not OK. At the same time, the common foods we find in cheap restaurants, fast food outlets, snack bars and the like all contribute to that extra weight.&lt;br /&gt;&lt;br /&gt;Not everybody is overweight; some bodies have a fast metabolism that burns everything. But others are not so lucky, and need to be more attentive. Here are some of the foods or aspects of food that are likely to put weight on susceptible bodies:&lt;br /&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Sweeteners: sugar (including &amp;ldquo;organic evaporated cane juice&amp;rdquo;), high fructose corn syrup, &amp;ldquo;natural sweeteners,&amp;rdquo; as well as artificial sweeteners (it&amp;rsquo;s not the calories, it&amp;rsquo;s what they do to the insulin system).&lt;/li&gt;&lt;li&gt;White flour, which is refined and stripped of its nutrients.&lt;/li&gt;&lt;li&gt;Milk, cheese, ice cream.&lt;/li&gt;&lt;/ol&gt;&lt;br /&gt;While each one of these may have an effect, it is the combination of the three that is the worst. The sweetener, the flour, and the high-protein cow&amp;rsquo;s milk products all together seem to produce the most noticeable weight &amp;ndash; so, having a meal of pizza, ice cream, and soda is a superfast way to put on weight. Also, the consumption of soft drinks, both regular and diet, is part of this problem.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;How to make changes?&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Replace all soft drinks with a combination of bubbly water (seltzer or mineral water) and natural juices (apple, cranberry, orange, etc), in a 50-50 proportion, or just the bubbly water with lemon or lime slices.&lt;/li&gt;&lt;li&gt;Eat as many fresh vegetables and salads as possible.&lt;/li&gt;&lt;li&gt;Replace cow&amp;rsquo;s milk with coconut milk&lt;/li&gt;&lt;li&gt;Replace bread with rye crackers&lt;/li&gt;&lt;li&gt;Replace ice cream with frozen bananas, sherbet with frozen grapes.&lt;/li&gt;&lt;li&gt;Finally, whatever you eat, CHEW IT WELL. Chewing will perforce make you cut down on calories without counting them, as you will be satisfied sooner. It will also help with digestion, and more than anything, it will get you in touch with what you are really eating, so changes may come much more easily.&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;br /&gt;While getting rid of excess weight is a good thing, it should, however, not be an obsession. Sometimes the body wants to be at the weight it wants to be, and fighting with it is counterproductive. associated diseases of diabetes,cancers, etc. will cripple the NHS....sooner, rather than later, I fear!&lt;/p&gt;&lt;p&gt;Whilst appreciating the emotional content of the problem, it is mostly an issue of too much of the wrong food/drink being ingested....and sedentary life-style choices.&lt;/p&gt;&lt;p&gt;The on-going official dietry advice from such organisations as Diabetes UK, British Nutritional Foundation, hospital nutrional departments, etc.etc., all filters down from the Food Standards Agency......whose proud boast that their advice hasn&amp;#39;t changed in the last fifteen years.......must be considered as part of the problem....or they are being totally ignored!&lt;/p&gt;&lt;p&gt;Feel free to check out their&amp;nbsp;&amp;#39;expert&amp;#39; advice on &amp;#39;good&amp;#39; lipids.....and the insulin/leptin response problems of, &amp;quot;a third of our diet should consist of starchy carbohydrates such as bread, pasta, rice, potatoes&amp;quot;,
